Caviar comes from 3 sturgeon types, 90% of whitch are fished in the Caspian Sea:

THE BELUGA : is a strong and voracious predator. Its dark grey caviar is appreciated for its size and smooth taste.

THE OSCIETRE : omnivorous, it mesures up to 2m and weigh up to 200kg. Its grey brown or golden caviar has a fruity taste with a nutty flavour.

THE SEVRUGA : is the smallest. Its caviar consists of small dark grey grains is sought after for its extremely fine and spicy flavour.
