MAXIM'S GIN
Maxim's
Gin comes from wheat and montain spring water, before being distilled
three times in a continous still and then a fourth time very carefully
and slowly in our small alambic pot stills in Cognac. The ten selected
botanicals are added to the totally neutral spirit as it is placed in
the still, eliminating the bitterness that could comes from extended
soaking or the harshness that comes from tha alcohol vapors being passed
through the botanicals in the end stages. In true alambic distillation,
we are able to cut the volatile heads and the heavy tails, retaining
just the heart of the gin. Then it is chill filtered to leave the complex,
smooth, elegant, lightly citrus flavours worthy of the Maxim's name.
